1 bottle (½ gal) – Margarita Man® Peach concentrate
2.5 gal – water
3.75 L – Champagne (5 standard bottles)
1 L – Rum
½ L – Peach Schnapps
combine all ingredients in a 5-gallon mixing container, stir or shake vigorously, and carefully pour into margarita or slush machine; vent mixing container after shaking a few times to allow gas from champagne to escape

The Peach Bellini may sound fancy—and it is—but its roots are surprisingly humble. This sparkling cocktail was born in the 1940s in Venice, Italy, at the famous Harry’s Bar. A bartender named Giuseppe Cipriani created a mix of white peach purée and prosecco, naming it the Bellini because the drink’s rosy hue reminded him of a saint’s toga in a painting by the Venetian artist Giovanni Bellini.
